Homemade 4th of July Popsicles

Hope everyone is having a wonderful summer so far! I absolutely cannot believe that the 4th of July is next weekend already! Time is really speeding by lately that’s for sure. Even so, I am super excited for the 4th!

We decided to make some homemade popsicles because…why not?! Red, white and blue and extremely simple! No joke, I really just threw these together! So perfect if you want to make something homemade but quick and easy.

4th of July Firecracker Popsicles!

All I did to make these was slice up strawberries into slices and small bites and add them to a popsicle mold along with some blueberries. You can add however much fresh fruit that you want to be in your popsicles. Don’t forget to add your popsicle sticks or whatever you want to use for a handle! Then I added sprite to fill everything in between!

Wasn’t really sure if these would turn out but they were way good! My son is obsessed with blueberries so these were a hit! Try them out! Super easy and fun for the kiddos 😛

Homemade Orange Gummy Bears

Orange Gummy Bears

Okay, it has definitely been way too long since I have done any blog posts! It is so difficult to keep up with everything but I’m doing my very best! I’ve really been focusing on my new Etsy shop lately, however, I really enjoy the blog so I want to keep it up to date as best I can!

As I have mentioned previously, I am probably going to be going crazy with making all different kinds of homemade gummy bears and fruit snacks since it was such a hit with my son! Such a perfect snack and a much healthier alternative to store bought.

These orange gummy bears are exactly as it sounds, full of orange goodness! I thought they tasted great and so did my son!

How to make:

Orange Gummy Bears

Homemade Orange Gummy Bears

Use:

– 1/2 Cup orange puree (use 1 large orange to get approximately this amount)

– 1/2 Cup Orange juice

– 3 Tbsp powdered gelatin

– 1 Tbsp honey

Peel and slice the orange and blend well in the blender. No need to add any liquid since there is already enough liquid in it to puree it well. Measure out 1/2 cup of the puree and set aside. Heat juice along with gelatin in a small saucepan for about 5 minutes while stirring. Do not bring to a boil. Add juice mixture to the puree slowly while stirring. Add 1 Tbsp honey and stir it in well. You could add any other add ins you would like as well such as chia seeds for example! Poor into a pan wide enough so that the gelatin mixture is fairly thin. An 8×8 pan works well. Let mixture set in the refrigerator for at least 15 minutes. Cut into gummy bear shapes or any other small cookie cutter shapes you want!

That’s it! Quick and easy. Best of all, this recipe just uses honey for a sweetener to make it that much more healthier for those little tummies! Remember not to give honey to babies under one year old.

My new thing to make lately is homemade hummus. Which is weird because…I don’t really like hummus. But my son does and if he likes something that is healthy and will actually eat it then heck yes I’m making it! He will pretty much eat anything if it can go on a cracker. Hummus is really good for you and has protein. This is awesome for little ones who don’t get a lot of protein. Sawyer loved the plain hummus I made so I thought adding avocados would make it that much better!

Avocado Hummus Recipe

This recipe is super simple! All you really need are the ingredients and a blender! Boom…done! This particular recipe also makes quite a lot so if you don’t eat a whole lot of hummus you may want to half it. It lasts about a week, after that starts to turn a bit brown.

 

What you need:

– 2 Cans Garbanzo Beans (also known as chick peas)

– 2 Avocados

– 2 Cloves Garlic

– 3 Tbsp avocado oil

-1 Tbsp Lemon Juice

– 1 tsp Cumin

– 3/4 Cup water

– tsp salt

 

Rinse garbanzo beans. If you really have a lot of free time then you could consider peeling the garbanzo beans. I didn’t do this since it is a bit tedious but I have heard that it can make a big difference in making your hummus really smooth. Add everything to the blender and blend well. Add more water if you want it creamier.

Banana – Coconut Homemade Gummy Bears!

Banana - Coconut Gummies

Any sort of snack that is an easy grab n’ go snack or something that I can simply give my son without having to feed it to him has become a staple in our house! The homemade gummy bears that I made a few weeks ago was a complete success! My son loved them and the great thing is that they don’t have a ton of added sugar or artificial ingredients like store bought gummy bears or any other sort of fruit snack. In fact, they’re purely fresh fruit puree, juice, gelatin, honey and any other healthy ingredients you may want to add in! So needless to say, you can expect that I am going to have fun with this and experiment with different flavors 😛

I whipped up these banana-coconut gummy bears at the same time I made my strawberry-pomegranate gummy bears and am finally finding the time to write about it! Find the strawberry-pomegranate gummy bears HERE if you are interested.

These actually became somewhat of a joke in our house since my husband and I were digging into them just as much…they are quite addicting!

How to make:

Banana/Coconut Gummy Bears

Ingredients:

-1/2 Cup pureed bananas

-1/2 Cup Pineapple – Coconut water (plain coconut water would work just fine).

-1 Tbsp Honey

-3 Tbsp Gelatin powder

 

Add 1-2 bananas to the blender (depending on how big your bananas are and about how much will make 1/2 cup pureed) and puree until very smooth. Add a small amount of water if needed to puree smoothly. Cook coconut water and gelatin powder in a saucepan over low heat until the powder has dissolved (4-5 minutes) while stirring. Do not let mixture come to a boil. After the powder has dissolved take the liquid off of the heat and slowly add it to the banana puree while stirring. Add honey and stir until combined. Pour the mixture into a pan or gummy bear molds. If you use a pan you want to use a size that will make it so the liquid is fairly shallow. An 8×8 or 9×9 inch pan would work well.

I did find that these did not last as long as the other gummy bears I had made. Bananas kind of get gross if left out so I suppose the same things happens when in gummy bears! They last about a week or less in an air tight container in the fridge.

Celery N’ Greens Fruit Smoothie

Green Smoothie

The idea for this smoothie came about partly because I was trying to switch up my green smoothies and partly because I was trying to think of a way to use up the rest of the celery in my fridge without just eating it plain 😛 Hey, whatever works right?!

It was smoothie day in the Alex household! Some days I love making smoothies for Sawyer and I for lunch. I am just so ecstatic that he loves smoothies so that I can just make ONE thing and we can both share it. So easy! And also sneaks in those pesky veggies like spinach!

Getting right to the point today…

How to make:

Green Smoothie

Celery N’ Greens Fruit Smoothie

-2 large stalks celery

-handful of spinach

-one banana

-1 Cup chopped pineapple

1/4 Cup yogurt

1/4 Cup pineapple juice (more if you need more liquid to smooth out the smoothie)

-handful of ice

 

Chop celery fairly small so that it is easier to blend up. Add everything to the blender. Blend well. To smoothen out even more so that you don’t have spinach chunks try adding a bit more ice and liquid and blending again for about a minute.

Up until recently I didn’t even think about making something like gummy bears or fruit snacks homemade! But now that it’s becoming more and more popular to do things homemade, have less sugar and use real, fresh fruits and veggies I now thought it would be a good idea to try. Not to mention it’s way more fun to say that you actually made them!

While I was making these I literally thought they were going to be awful! I’ve never used plain unflavored gelatin and I don’t know if it was just me or not but it smelled so bad! Must have just been when I was heating it all up though because they turned out fantastic! No, like I’m not kidding! These are so delicious and ADDICTING! Like my husband has to tell me to stop eating our son’s snacks type of addicting! 😛

I just wanted another snack alternative. I feel like I am constantly giving my son crackers alllllll the time! Crackers, crackers, crackers…they are everywhere! In the car, in the stroller, on the counter, on the floor, in my diaper bag, in the toy box…Why do I keep finding all these crackers?! I swear he has more fun dropping them everywhere than actually eating them. Okay, getting a bit off topic! I kept finding homemade gummy bear ideas and recipes on Pinterest and wanted a give a go at my own recipe. You can use pretty much any type of juice or milk to add the gelatin. I decided to go with pomegranate juice because of all of the health benefits. There are lots of different kinds of pomegranate juice but I went with just 100% pomegranate and then used a strawberry puree. They are SO good! Don’t take my word for it, try them out!

Strawberry – Pomegranate Gummy Bears

-1/2 Cup Pureed Strawberries

Do not let mixture come to a boil. After the powder has dissolved take the liquid off of the heat and slowly add it to the strawberry puree while stirring. Add honey and stir until combined. Pour the mixture into a pan or gummy bear molds. If you use a pan you want to use a size that will make it so the liquid is fairly shallow. An 8×8 or 9×9 inch pan would work well.

Put pan in the refrigerator for at least 15 minutes or longer.

Once it is completely set (you should be able to touch it and it is firm and smooth to the touch, not sticky or wet) you can start cutting out the gummy bear shapes. You could make any shape you want, it doesn’t have to be gummy bears. I got these adorable itty bitty cookie cutters from Amazon, it is a pack of three and the smallest one is really tiny and resembles a gummy bear. You can find them here.

I saved all of the extra gummy parts that were in between each gummy bear shape as well. Hey…it all tastes the same!

Keep refrigerated.

These are so much fun to make and another great toddler snack! I made a whole bunch to take on our road trip with us to go visit family!

Even though Sawyer is eating mostly whole foods, picking things up on his own and eating what my husband and I are eating, I do still make a few fruit and veggie purees. I haven’t completely stopped making baby food purees because I sometimes use them to mix into things and also use a puree every morning to mix into his baby cereal. He is still eating baby cereal for breakfast for the iron he needs so I switch it up between the oatmeal, rice & multigrain. I still can’t help but think it is so bland though so I always mix stuff in. He especially loves the fruits but I love mixing in veggies too to give him a little extra for the day. Now that he is eating and chewing foods on his own he is a bit more picky about veggies! :/ So this helps a lot! So here is a super easy one I made the other day.

Apple – Plum Baby Puree

How I made it:

-5 ripe plums

-5 large apples

Rinse off apples and plums. Peel and core the apples, cut them into pieces and boil in water in a pot for about 10 minutes. Peel and core the plums and add them to the blender. Once the apples are done let them cool a bit and rinse with cooler water. Add them to the blender as well. They both have enough of their own juices so you shouldn’t need to add any liquid. Blend well and that’s it!! See, super easy! This made about 10 – 4oz jars for me. I like to freeze the extras so it lasts longer.

My son (he is almost 10 months already!) has branched out and it starting to eat a lot more foods of different textures and even eating pieces of food that my husband and I are eating. It is becoming more and more fun now that he is not just simply eating purees. He is starting to eat sandwiches (given in bites), green beans, rice, noodles and other cooked veggies. It also makes things sooo much easier when trying to go out to eat at a restaurant. He keeps much more occupied when we can feed him some things that we are eating as well. The other day my husband let him try lemon…ooooh man did he make quite the sour face!! To my surprise, he wasn’t upset though. In fact, he kept leaning in for more! But would make the same head-shaking sour face every time and then smile!

Asparagus-Yellow Squash Baby Food Puree

I just made this one the other day and my son loves it!

I’ve especially been switching things up when thinking of new veggies to cook for my son. Thankfully he is normally a wonderful eater but on the occasions where he does act a bit picky, it is usually with veggies. Most of the time I think that it is because of the texture since many of the veggies end up a bit grainy. So I’ve been trying new ones out to find what he likes best so that he still gets plenty of veggies. I am also a big fan of sneaking healthy veggies in. Many veggies or even some fruits that I prepare I like to add spinach or kale since it doesn’t have a lot of flavor but adds a lot of nutrients.

Asparagus-Yellow Squash

What I used:

-2 yellow squash

-1 whole bunch of asparagus

-water

 

Rinse both veggies well. Cut the ends off of the asparagus spears (not the heads but the other end) and cut into smaller chunks. Cut ends off of the squash as well and cut into smaller chunks. Steam both veggies for 15 minutes. If you decide not to steam, I suggest cooking the asparagus in a skillet with olive oil or coconut oil. The squash could also be prepared that way or by boiling. Steaming preserves the nutrients best.

Add everything to the blender and blend well. Add some water (you may have to do this a couple of times until you get the consistency you want) and blend again until smooth!

See?! So simple! Making homemade baby food does NOT have to be difficult. Plus you get to know exactly what is in the food that you are feeding your baby. Not to mention saving money!
