Celery N’ Greens Fruit Smoothie

Green Smoothie

The idea for this smoothie came about partly because I was trying to switch up my green smoothies and partly because I was trying to think of a way to use up the rest of the celery in my fridge without just eating it plain 😛 Hey, whatever works right?!

It was smoothie day in the Alex household! Some days I love making smoothies for Sawyer and I for lunch. I am just so ecstatic that he loves smoothies so that I can just make ONE thing and we can both share it. So easy! And also sneaks in those pesky veggies like spinach!

Getting right to the point today…

How to make:

Green Smoothie

Celery N’ Greens Fruit Smoothie

-2 large stalks celery

-handful of spinach

-one banana

-1 Cup chopped pineapple

1/4 Cup yogurt

1/4 Cup pineapple juice (more if you need more liquid to smooth out the smoothie)

-handful of ice

 

Chop celery fairly small so that it is easier to blend up. Add everything to the blender. Blend well. To smoothen out even more so that you don’t have spinach chunks try adding a bit more ice and liquid and blending again for about a minute.

Up until recently I didn’t even think about making something like gummy bears or fruit snacks homemade! But now that it’s becoming more and more popular to do things homemade, have less sugar and use real, fresh fruits and veggies I now thought it would be a good idea to try. Not to mention it’s way more fun to say that you actually made them!

While I was making these I literally thought they were going to be awful! I’ve never used plain unflavored gelatin and I don’t know if it was just me or not but it smelled so bad! Must have just been when I was heating it all up though because they turned out fantastic! No, like I’m not kidding! These are so delicious and ADDICTING! Like my husband has to tell me to stop eating our son’s snacks type of addicting! 😛

I just wanted another snack alternative. I feel like I am constantly giving my son crackers alllllll the time! Crackers, crackers, crackers…they are everywhere! In the car, in the stroller, on the counter, on the floor, in my diaper bag, in the toy box…Why do I keep finding all these crackers?! I swear he has more fun dropping them everywhere than actually eating them. Okay, getting a bit off topic! I kept finding homemade gummy bear ideas and recipes on Pinterest and wanted a give a go at my own recipe. You can use pretty much any type of juice or milk to add the gelatin. I decided to go with pomegranate juice because of all of the health benefits. There are lots of different kinds of pomegranate juice but I went with just 100% pomegranate and then used a strawberry puree. They are SO good! Don’t take my word for it, try them out!

Strawberry – Pomegranate Gummy Bears

-1/2 Cup Pureed Strawberries

-1/2 Cup Pomegranate Juice

-1 Tbsp Honey

-3 Tbsp Gelatin Powder

First rinse and cut off ends of fresh strawberries. Add a few large strawberries to the blender (around 5-7 strawberries or so) and puree until very smooth. Add a small amount of water if needed to puree smoothly. Cook pomegranate juice and gelatin powder in a saucepan over low heat until the powder has dissolved (4-5 minutes) while stirring. Do not let mixture come to a boil. After the powder has dissolved take the liquid off of the heat and slowly add it to the strawberry puree while stirring. Add honey and stir until combined. Pour the mixture into a pan or gummy bear molds. If you use a pan you want to use a size that will make it so the liquid is fairly shallow. An 8×8 or 9×9 inch pan would work well.

Put pan in the refrigerator for at least 15 minutes or longer.

Once it is completely set (you should be able to touch it and it is firm and smooth to the touch, not sticky or wet) you can start cutting out the gummy bear shapes. You could make any shape you want, it doesn’t have to be gummy bears. I got these adorable itty bitty cookie cutters from Amazon, it is a pack of three and the smallest one is really tiny and resembles a gummy bear. You can find them here.

I saved all of the extra gummy parts that were in between each gummy bear shape as well. Hey…it all tastes the same!

Keep refrigerated.

These are so much fun to make and another great toddler snack! I made a whole bunch to take on our road trip with us to go visit family!

Super Simple Hummus Recipe

Okay, so I can’t really take credit for this one. My husband is actually the one who whipped this one up!

A little while back Sawyer loved garbanzo beans, LOVED them! He would shove them in his mouth one right after the other. Of course, soon after that came to a halt and he now refuses to eat them. He may try it at first but then spits it right out with a disgusted look. So I don’t know what happened but regardless, I had a few cans of chick peas lying around. My husband had the brilliant idea to make homemade hummus. Okay I am going to come clean and admit that since I’ve never even eaten hummus I didn’t even know that it was made primarily from chick peas!! Maybe I’m the only one but this was news to me! So I didn’t realize it was so easy to make homemade.

This is perfect because our son, like many one year olds I’m sure, won’t eat a whole lot of meat or protein. So this is perfect for a little extra protein. If it goes on a cracker, my son will eat it! Crackers are his absolute favorite!

How to make:

 

Super Simple Hummus:

1 Can Garbanzo beans

2 Tbsp olive oil

2 Tbsp Lemon Juice

1 tsp cumin

1 tsp salt

1/4 C water

Drain and rinse garbanzo beans. This next step isn’t necessary but to make it even creamier peel the garbanzo beans. Blend all ingredients in a food processor or blender.

I, myself am not a huge fan of the taste of chick peas so hummus really isn’t my favorite. Hummus is really good for you though so I did try to see if my son liked it and he eats it on crackers! Success!

Easy Grab Pancake Muffins

Simple Grab Pancake Muffins

Breakfast was so simple when doing baby cereal. I would usually add something to it like a fruit or veggie puree to give it something extra. But either way, it was so easy, simply because it was the same thing every morning. I would switch up what puree I added but it was always the same thing, baby cereal. I didn’t have to think twice about what I was giving my little guy for breakfast. Now that I’m making actual breakfasts every morning instead of doing baby cereal it has demanded a bit more creativity. Now it’s, “Oh yeah, what am I making Sawyer for breakfast?!”

I really feel like I should switch it up so I try not to give him the exact same thing every morning. And yet, at the same time I want something really easy that I can quickly prepare for my demanding child that gets his “wake up and I want breakfast now” attitude that he gets from his mom 😛

These pancake muffins make 12 muffins and are super simple to just zap in the microwave in the morning! Boom…just like that you now have some ready to go breakfasts.

How to make:

Easy Grab Pancake Muffins:

Use:

-2 Cups bisquick (or any pancake mix would probably do! Or if you have a favorite homemade recipe)

-1 Cup milk (I used whole milk since they were for my 1 year old)

-2 Eggs

-1 Tbsp coconut oil (make sure to melt down if it’s solid so that it mixes in well)

-Handful of chopped spinach

-Add-ins of your choice (Ideas: blueberries, strawberries, cheese, bananas, sausage, cinnamon, sweet potato…)

Preheat oven to 350 degrees. In a bowl mix together bisquick, milk, eggs, coconut oil and chopped up spinach. I used a fairly good amount of spinach and my son either loves spinach or can’t tell at all that it’s in there! If you are only going to use one add-in you could add desired amount now. If you want to use multiple different add-ins to switch up each muffin then add them in separately once in the muffin tin. Once your batter is ready pour it into your muffin tin. I used silicone muffin liners. Now add a little bit of whatever add-ins you would like. This time I chose to use blueberries, banana and cheddar cheese (each for separate muffins). Bake for about 12-15 minutes.

That’s it, super easy! Add a bit of syrup after heating if you’d like.

Dr. Seuss – Cat in the Hat – 1st Birthday Party!

Oh what fun, Sawyer is one!! This is a bit overdue since he turned one on the 10th but I figure, better late than never!

We had a blast throwing Sawyer his very first birthday party! It was so much fun since both sides of grandparents could both come! With living so far away from everyone, that sure doesn’t happen very often! You could really tell that Sawyer was loving all of the attention, almost like he knew that the day was all about him. I knew that I wanted to do a Dr. Seuess – Cat in the Hat theme because he has so many of the books and loves the “Cat in the Hat Knows a Lot About That” TV show. He grins and dances every time it comes on!

I was so excited to make all kinds of food and especially his very first cake! I decided to make him his own smash cake and then make cupcakes for everyone else! I even made “Green Eggs & Ham” by making the filling inside of deviled eggs green and making ham wrapped pickle rolls to go along with. My husband and I came up with some cute “Seusical” names for name tags for the food. We had things like:

Punchalafizzer (Punch)

Oodles of Noodles (Pasta Salad)

Trufulla Trees (Veggies)

Barbaloot Fruits

And a few others too. It was fun and really brought out the kids in us! Well…that doesn’t really take a lot 😛

For the cupcakes I made Thing 1 & Thing 2 inspired cupcakes. The use of cotton candy for blue hair wasn’t really my own idea…I had seen this on Pinterest a few times! I made red velvet cake and a vanilla buttercream icing toped with blue cotton candy. Then glued on little circles to the paper but instead of saying Thing 1 & Thing 2 it said “Sawyer is 1.” Little tip, if you ever want to make cupcakes with cotton candy on top, make sure to put the cotton candy on shortly before serving. Luckily I did this so it worked out okay but after sitting for awhile the cotton candy kind of just dissolves into blue crystals on the cupcakes. This oddly enough worked out and gave it a nice texture anyway! I think it just depends on what the humidity is at and the fact that it is sitting in icing.

For Sawyer’s smash cake I made a white cake (Okay, I’ll admit it, I used boxed cake! But hey, I didn’t have a lot of time and to be honest, I think boxed cake tastes delicious!) iced with vanilla buttercream. For the buttercream I just used 1 C butter, powdered sugar, 2 tsp vanilla and milk. For the powdered sugar and milk I didn’t really measure. I just added until it all mixed together with a good taste and consistency. I made the Thing 1 & Thing 2 characters by melting white chocolate and adding color to it. The chocolate tends to harden back up a bit when you add food coloring so I added just a tiny bit of coconut oil and it melts it right back up really smooth. I had printed the characters out on paper and layed wax paper over top so that I could see the characters through it. Then I just piped the melted chocolate on the wax paper tracing the characters. I wasn’t sure if it would turn out or not but they ended up looking great!

The funniest part about the whole party was Sawyer eating his cake! We literally just sat and watched him for so long! We sang him Happy Birthday, blew out his candle and then gave him his cake. I kind of expected him to be a bit iffy about it because he doesn’t like getting gooey things all over his hands. But I mean c’mon, it’s CAKE! So I thought he’d be diving in at least a little! Nope, after nearly poking it he already has a completely disgusted look on his face! My husband goes and grabs a baby fork and to my amazement he actually uses it! He sits there and eats his cake with a fork! I love that little stinker so much!

St. Patrick’s Day Food for Kids!

Happy St. Patrick’s Day!!

Sawyer and I have our green on today and it is the most beautiful day here! It’s 82 degrees and sunny out now so we are definitely going outside as soon as Sawyer is up from his nap! I absolutely love holidays! For many reasons, but for one I love to really get into it even when it comes to food! Having kids is the perfect excuse to go all out even more! So today for St. Patty’s Day we have already had a very fun and festive breakfast and lunch! This morning I made green Shamrock pancakes, which were a huge hit! Then for lunch we went all out green! Luckily, with green there are tons of healthy options! Making green yummy and desirable for kiddos is a whole other story! Check out what I did 🙂

What? Spinach? I didn’t say spinach! Psst…don’t even mention the spinach part because you don’t even know it’s in there! I added quite a lot even and you could hardly tell!

How to make:

(I quartered a Bisquick recipe since I was only making pancakes for my 1 year old. This made 2 good sized pancakes for me).

-1/2 C Bisquick

-1/4 C milk

-1/2 tsp Baking Powder

-A few spinach leaves chopped real fine

-Green food coloring

Mix everything together thoroughly and pour onto a skillet over medium heat. I attempted to make shamrock shapes but wow, that is way harder than it looks! I’ve seen people make some real elaborate things with pancakes and I am now giving them more props than ever because I could hardly make a shamrock shape! No biggie…all tastes the same!

Yum! Like I said, a huge hit with my son! He was begging for more after every bite!

 

 

St. Patrick’s Day Lunch

Everything Green!! I knew that veggie macaroni and cheese would be perfect for today! Plus, my son gobbles it up every time!

Veggie Macaroni & Cheese:

-Elbow macaroni

-Veggie Puree ( I used broccoli/cauliflower/spinach puree. Find out how to make broccoli/cauliflower puree on my Homemade Baby Purees page.)

-Small amount of Velveeta cheese

-Avocado oil

Boil pasta per the package instructions. Drain and pour back into pot while still on a low heat. Add veggie puree, cheese and avocado oil. Let everything heat up while stirring until everything melts together. That’s it!

 

I also used peas, shamrock shaped kiwi slices, cucumber and crackers.

St. Patrick’s Day GREEN Smoothies!

GREEN Spinach – Kale – Kiwi Smoothie

I’ve made all sorts or green smoothies and what better than a GREEN smoothie for St. Patrick’s Day!

So I’ve made a compilation of a few of my favorite green smoothies.

 

St. Patrick’s Day Green Smoothies

 

1) Oranges & Greens Smoothie

Use:

-2 Oranges
-2 Bananas
-Handful of spinach
-Carrot Juice
-Vanilla Greek yogurt
-Chia seeds
-Ice

Add all ingredients to the blender and blend well!

 

 

2) Strawberry – Kiwi Smoothie

Use:

-4 strawberries
-2 kiwis
-half banana
-handful of spinach
-3 small stalks kale
-1/4 Cup greek yogurt
-1/4 Cup carrot juice

Add ice to your blender. Add all of the ingredients and make sure to blend really well. Add more carrot juice or water if needed. The kiwi works so well in this smoothie and adds a good level of tartness. Could also add flaxseed 🙂  

 

 

 

3) Super GREEN Smoothie

Use:

-2 Kiwis
-1/4 Cup pineapple chunks
-1 Banana
-Handful of spinach
-3 Small stalks kale
-1/2 Cup greek yogurt
-1 Spoonful of flaxseed
-1/4 Cup pineapple juice

 

Add ice along with all ingredients to your blender. Blend until very smooth. Add some water if it’s too thick. Amazingly delicious green smoothie! Yes, it is very green, but don’t go by looks! It tastes fantastic!

Use:

-2 Kiwis
-1 Banana
-1/2 Cup Pineapple chunks
-Handful of spinach
-2 tsp Chia seeds
-Coconut water (as much as needed)

Add ice along with everything else to the blender and blend well! I made this one with my son but for his added his own Yobaby whole milk yogurt and didn’t add the chia seeds to his. He loved it and so did I!

Sawyer’s First Birthday!

Happy Birthday!

Today is Sawyer’s first birthday! What?! I absolutely can’t believe it has already been a year since he was born! Where in the world did the time go? However, I feel so excited because he has learned so much and is always such a happy boy! It’s crazy how even the simplest things are so exciting when it is your own child. Something like pointing to an object may not seem like that big of a deal to most people but when you are the one to raise them and see them go through a phase of only eating, pooping and burping and all of a sudden they’re communicating! It’s HUGE!

It’s very funny actually, I have recently noticed that there are many conversations like this in our house; Sawyer: “baadaaaaaaay.” Me to my husband: “oh my gosh…oh my gosh! Did you hear that? He said BATH TIME!!” My husband: “I think that’s a reach, hun.”

At one year he is now walking, saying a few words, laughs all the time, points at things and is showing so much personality now! In fact, he is even getting a bit sassy. Giving dirty looks or yanking MY phone away from me when I try to take it back from him. He can be quite a stinker but he is SO much fun! I love spending my days with him.
