1 sweet potato
handful of spinach
Set oven to 350 degrees. Wash off sweet potato and eggplant. Cut off ends and peel sweet potato. Cut into smaller pieces. Cut off the end of the eggplant and make some slices with your knife throughout the sides of the eggplant.
Place potatoes and eggplant on a baking sheet and bake for 30 minutes. Take off the potatoes (with an oven mit or something of course :P) And put the eggplant back in the cook for an additional 15-20 minutes.
Steam spinach for about 10 minutes. You could also boil the spinach but steaming holds in a lot of the nutrients.
Let everything cool. Remove the eggplant from the skin. Add everything to the blender and add about 1/4 C of water, breastmilk or formula, whichever you prefer. Blend until creamy (this one will be a bit grainy) and add more liquid as needed.
This made about 6 servings of baby food.
To be honest it looks pretty nasty But to my surprise, my son gobbled this right up!! And so healthy!
